LEM was founded by Larry Metz in 1996 having a simple thought, provide the equipment, supplies and know how to anybody thinking about converting their game to delectable sausage and jerky. To do this Larry drew on 35 years of knowledge as a meat cutter with one of the biggest food-service company’s within the United States. Being a passionate hunter, his understanding of processing and love of the outdoors led him to establish a big game processing business in the 1980’s. During this time he developed a boneless approach to processing that gave the processor many different table cuts that were tender, had exceptional taste and were custom cut to meet the person’s needs. In 1991 their first product, a 98 minute video, “Deer Processing From Field to Table”, was created in response to many purchasers requests. It remains a best seller to this day. Hundreds of thousands of hunters have learned to professionally process their game from this video. Larry along with the LEM team were soon developing a complete line of equipment, supplies and seasonings to satisfy the various needs and tastes of big game hunters everywhere.
